To create a restaurant befitting Jordan Bailey (ex-head chef of 3 Michelin Star Maaemo) & Majken Bech’s first solo restaurant. The objective was to create a destination restaurant celebrating Ireland. Aimsir, meaning ‘weather’, only uses the very best ingredients from the island of Ireland.
The solution Aimsir is inspired by the climate & weather represented through natural colours, materials and textures. The key restaurant focus is the central island pass where Jordan and his team add their finishing touches, bringing the kitchen experience to the centre of the restaurant. Each table is lit just to the edge to add drama and a sense of display as your food arrives. The premium cocktail bar adds a little chicness to the arrival experience and offers the opportunity to try a range of Irish spirits. All bespoke furniture elements are hand crafted in Ireland matching the restaurant ethos.
